  • 1 carrot, peeled, finely chopped
  • 1 small chicken breast fillet, chopped
  • 300g green prawns, peeled, deveined, roughly chopped
  • 3 green onions, thinly sliced
  • 1/4 small Chinese cabbage, finely shredded
  • 1/4 cup fried shallots
  • Thinly sliced red chillies, to serve

Directions:

  1. Cook the rice according to the packet instructions until just tender. Drain it and transfer to a baking tray. Fluff the rice with a fork and let it cool to room temperature. Cover and refrigerate for about 2 hours until cold.
  2. Mix the kecap manis, soy sauce, and sweet chilli sauce in a jug and set aside.
  3. Heat a wok over high heat. Add 1 teaspoon of oil and swirl it around. Pour in a quarter of the beaten egg and swirl to make a thin omelette. Cook for about 30 seconds until the egg sets, then slide it onto a board. Repeat this process for the remaining egg and oil in three batches to create four omelettes. Roll them up and slice them into strips.
  4. In the same wok, heat the remaining 2 tablespoons of oil over high heat. Add the sliced brown onion, sambal olek, garlic, shrimp paste, and carrot. Stir-fry for about 1 minute. Then, add the chopped chicken and stir-fry for 1 to 2 minutes until it’s sealed. Next, add the prawns and cook for about 2 minutes until they turn pink.
  5. Add the cold rice, soy sauce mixture, green onions, and shredded cabbage to the wok. Stir-fry for 3 to 4 minutes until the rice is heated through. Toss in half of the sliced omelette.
  6. Serve the Fried Rice on plates, topped with the remaining omelette slices. Sprinkle with fried shallots and serve with the sliced chillies on the side.
