  • 8 chicken drumsticks

  • 2 tbsp apple cider vinegar
  • 1 tsp sea salt flakes
  • ½ tsp cracked black pepper
  • 1 cup (75 g) shredded green cabbage
  • 1 cup (75 g) shredded red cabbage
  • ½ cup (30 g) finely chopped kale
  • 1 carrot, julienned or finely sliced

Directions :

  1. Preheat the oven to 220°C (425°F) (200°C/400°F fan-forced).

  3. Reduce the oven temperature to 200°C (400°F) (180°C/350°F fan-forced).
  4. In a medium bowl, whisk together the yoghurt and eggs. Set this mixture aside.
  5. On a large sheet of baking paper or a large plate, mix the flour with the paprika, garlic powder, onion powder, and salt.
  6. Dredge each chicken drumstick in the flour, then dip it into the egg/yoghurt mixture (letting the excess drip off), and finally coat it in the breadcrumbs. Press the breadcrumbs onto the chicken firmly.
  7. Place the chicken on a wire rack (spray the rack with olive oil first to prevent sticking) and spray the chicken with olive oil.
  8. Bake on the middle rack of the oven for 45–50 minutes until golden and cooked through. No need to turn the chicken during baking.
