how to make Cheesy Potato Gratin Stacks

Ingredients :

  • Oil spray
  • 1.2 kg / 2.4 lb starchy potatoes (large long ones) (Note 1)
  • 30g / 2 tbsp unsalted butter
  • 2 garlic cloves (finely minced)
  • 1/2 cup heavy / thickened cream
  • 1 tsp fresh thyme leaves (or 3/4 tsp dried)
  • 1/2 tsp salt
  • Black pepper
  • 75g / 2.5 oz gruyere cheese (sliced into 12 squares to fit into muffin tin, or other melting cheese) (Note 2)
  • 3/4 cup gruyere cheese (or other melting cheese), shredded

Directions :

  1. Preheat oven to 350°F/180°C (all oven types).

  2. Brush muffin tin with butter: Melt butter in a saucepan over medium heat, then use what you need to lightly brush the muffin tin holes with butter. The remaining butter will be used for the cream sauce.

  3. Make cream sauce: In the remaining butter, add the minced garlic and cook for 20 seconds. Add heavy cream and salt, then bring to a simmer. Simmer for 30 seconds, then remove from heat and keep warm.

  4. Slice potatoes: Peel the potatoes and trim the base so they can stand upright. Cut them into cylinder shapes that fit in the muffin tin. Slice them into 2mm (1/10") rounds using a mandolin or sharp knife.

  5. Assemble stacks: Place the potato slices in the muffin tin, stacking them halfway up the holes and trying to match sizes for neat stacks.

  6. Add cream: Drizzle each potato stack with 1 teaspoon of the cream mixture (using half of the mixture).

  7. Add cheese slice: Top each stack with a slice of gruyere cheese.

  8. Layer more potatoes and cream: Add remaining potato slices to each stack, making them about 1cm (1/3") above the rim of the tin, as they will sink slightly when baked. Drizzle with the remaining cream mixture and sprinkle with most of the thyme (set aside some for topping).

  9. Bake for 40 minutes: Cover loosely with foil and bake for 40 minutes, or until the potatoes are cooked through. A small sharp knife should go through without resistance.

  10. Top with cheese and finish baking: Remove from the oven, sprinkle with shredded cheese, and bake without foil for another 10 minutes or until golden.

  11. Garnish with thyme: Sprinkle remaining thyme on top.

  12. Let them stand for 5 minutes, then remove to serve. Use a tablespoon or butter knife to help scoop them out. (Note 3)
