Directions :
- Using a small knife, cut a slit down the length of the vanilla bean and scrape out the seeds.
- Place the cream, milk, and both the vanilla seeds and whole vanilla bean into a small saucepan over medium heat. When it starts to simmer, remove it from the heat and let it cool for 5 minutes.
- Meanwhile, place the egg yolks and sugar in a bowl. Whisk for 2 minutes until the mixture lightens in color.
- Remove the vanilla pod from the milk mixture and discard it.
- While whisking, SLOWLY pour the warm milk mixture into the egg yolks. Then pour it back into the saucepan.
- Return the saucepan to low heat (medium-low if using an electric stove). Whisk regularly for the first 3 minutes, then constantly for the next 5 minutes or until the custard coats the back of a spoon. You should be able to draw a path with your finger through the custard.
- Remove from heat.
- Optional: Strain the custard through a fine sieve for a smoother texture.
- The custard can be kept in the fridge for up to 3 days. It will thicken slightly more as it cools to room temperature. Do not freeze.
