Directions:

  1. Place the cold cream cheese on a large piece of cling wrap.
  2. Cover with another piece of cling wrap.
  3. Use a rolling pin to roll it into a rectangle about 32cm / 13" x 23 cm / 9". (Note 2)
  4. Peel off the cling wrap and cover the cream cheese with salami, slightly overlapping the slices.
  5. Cover the salami with a new piece of cling wrap, press down, and turn the roll over so the cream cheese side is up.
  6. Peel the cling wrap off to expose the cream cheese. Sprinkle with capers and parsley.
  7. Starting from the long edge, roll up the mixture, removing the cling wrap as you go. Roll firmly to avoid air bubbles.
  8. Once rolled, wrap it back in the cling wrap, twist the ends, and refrigerate for 4 hours or more.
  9. Unwrap the roll from the cling wrap and slice into rounds. Serve with crackers.
