  1. Mix all the spread ingredients together in a bowl.
  2. Spread half of the mixture on one flatbread, making a square shape.
  3. Top it with half of the smoked salmon slices.
  4. Spread some butter on another flatbread, just thinly like buttering bread. Place this flatbread, butter side down, onto the salmon (Note 2).
  5. Spread the remaining mixture on the second flatbread in a square shape, then top with the remaining salmon.
  6. Butter the third wrap and place it butter side down on top of the salmon.
  7. Use a large flat object, like a cutting board, to press down lightly on the layers to smooth everything out and compress it.
  8. Cover the stack with cling wrap. Refrigerate for at least 4 hours or up to 48 hours so the filling sets.
  9. When ready, use a serrated knife to trim the edges to make a square. Be careful not to cut down too hard as the filling might squirt out. Use a sawing motion to cut.
  10. Cut the square into 6 or 7 even strips, and then cut each strip into squares. Serve with toothpicks, wedges of lemon, and extra dill for garnish.
