- 1 tsp sugar (any)
- 1 sprig of basil with leaves
- 1/3 cup finely chopped basil
Directions
- Heat the oil in a large saucepan over medium heat.
- Add the garlic and onion, cooking until they become translucent, which should take about 2 to 3 minutes.
- Add the dried basil and cook for 20 seconds. Be careful not to let it burn.
- Stir in the remaining ingredients – rice, chicken broth, tomato paste, paprika, and sugar – and mix until the tomato paste is dissolved.
- Crush the basil sprig in your hand, drop it onto the surface of the rice mixture, and gently push it in without stirring.
- Cover the pot and bring the mixture to a simmer. Immediately turn the heat down to medium-low (or low if your stove is strong) and cook for about 15 minutes, or until all the liquid is absorbed. You can tilt the saucepan to check.
- Remove from heat and let it sit, covered, for 10 minutes.
- Take out the basil sprig, fluff the rice with a fork, and taste for salt. Leave it uncovered for another 5 minutes before stirring in the fresh chopped basil.
- Serve immediately.
